...specializes in small batch roasting that highlights the flavor profile of our hand selected beans. The biggest key to a good cup of coffee is freshness. The best "age" of a coffee is between three and fourteen days after it has been roasted. We promise to provide you with the freshest coffee and will therefore roast and ship orders as we receive them. Our head roaster carefully selects each bean using a multi step process. This process includes roasting a cupping sample in a Behmor 1600 “drum” roaster. This sample is then cupped against another bean of the same country and two beans of other origins. The sample is graded across several categories including: flavor, wet aroma, dry fragrance, body, and finish. After selecting a bean, another sample is roasted to a slightly darker roast for an evaluation of pour over brewing. This step most closely resembles how you might be brewing our coffee to enjoy.
The Kostal Team
We are a father (Dan) and son (Eric) roasting duo who share a vast knowledge of coffee. Dan’s love of coffee goes back decades. Back in the mid 1980’s his travels with the United States Air Force took him to Seattle where he encountered specialty coffee in the form of the original “Starbucks”. Ever since, Dan has always searched out the best fresh local coffee. The roasting aspect really took off when Dan purchased a home roaster in 2003. Back then, Dan and Eric were involved in an internet based green coffee cooperative. This coop had a wide range of members ranging from roasters, baristas, importers, and even farmers. The information and knowledge gained on these forums has proven to be the groundwork for our company today. Around this time, Eric was attending college away from home and Dan was shipping him fresh roasted coffee to get his “fix”. Shortly after graduation and moving out west, Eric purchased his own Behmor 1600 to begin roasting. We still use this same roaster for our sample roasts. Along the way, we have taken a handful of roasting and barista classes to further develop our skills. Kostal was established in 2019, and we began production roasting on the Probatone 5kg. The use of this machine and the cropster software program has allowed us to fine tune and dial in our roasts to offer consistency from nano roast to nano roast. |
